Paint original air breather cover/ redo pinstriping?

I recently acquired a 1983 z28 CFI. It is in immaculate original condition overall. The textured paint on the air breather is chipped. Im trying to keep the car as original as possible and eventually sell it. Should i keep the original paint on it or strip it off and repaint. What would be the best paint to use on it?
I guess I should ask, how far can i go with replacing things before i can't call it all original anymore? I'd like to redo hood decals, pinstriping and air breather, brackets, etc. Right now it is exactly how it was when it left the factory other than spark plugs, radio, brakes, and exhaust, which were changed before i owned it.
