will an fittings hold nitrous pressure levels?
i was told AN fittings can withstand nitrous pressures and then of course someone else said "no they can't" . so what i need to know is will i be able to cut my feed line, under my arm rest, and add a small pressure gauge in my ashtray with a tee fitting and short piece of hose??

Yes, you will. Assuming the fittings don't leak, they are completely capable of holding the pressure.

Cutting braided SS line, and installing the AN fittings correctly is not the easiest thing to do.
An alternative is to get a "gauge block" (Earls and NOS make them), insert it between the end of you main hose and the solenoid, and use the 1/8" NPT side out to insert a 1/8" male x -3AN (or whatever size the connection is on your gauge) male fitting (its actually a special fitting, for nitrous gauges located inside the passenger compartment. It has a very small restriction orifice in it, to prevent a large flow of nitrous into the passenger compartment if the gauge breaks - AutoMeter includes these with their mechanical gauges), and run a -3AN hose to your pressure gauge.

The AN fittings would be the least of my worries considering that is what is used on all nitrous kits when connecting line for nitrous. I would be more concerned about the line bursting if by chance your using anything out side of teflon line. Don't forget a nitrous line will see psi from 0 to as much as 1200psi plus depending on bottle temp.
