Yesterday i went to the track with a group of friends, and one of them own a new 5.0 we did a quick pull i used my nitrous. Next thing i notice is my car is blowing oil and black smoke like a diesel. Then when we arrive to the track i pop the hood and my engine bay is covered in oil. Does anyone know what could be happening? this only happens when i use nitrous. without nitrous the car runs fine no issues at all. I was thinking burnt valves or fouled plugs?

Where did the oil come from? If it's blowing out the dipstick, or out of the grommet in the passenger side valve cover, there's a good chance you cracked a ring land, and have excessive blowby pressuring the crankcase.
Check the hose from the throttle body to the valve cover, and the top of the throttle body for heavy oil buildup. Make sure your PCV system is working, but it sounds like there's just too much blowby for it to handle.

im almost certain oil came out the groumet and dipstick. i will check to make sure the pcv system is working. If my pcv is not working could i install a catch can?

If you have so much pressure that it's blowing oil out of the crankcase, you have to eliminate the source of the pressure. I doubt that a simple, plugged PCV valve would cause that big a problem, but replace the valve, and verify that you have vacuum at the source for the PCV valve. If you still have excessive pressure and oil blowing out, catching the oil isn't your problem. It's eliminating the pressure. You wouldthen have to check for crakced ring lands and damaged piston rings.
I have a totally stock PCV system, and spray a 300-shot on a well-built engine, and there isn't a drop of oil blowing out of anywhere, and none in the line to the throttle body.
