N2o plugs

Will going with colder plugs and retarding the timing increase my track times? What your the pros and cons of this?

Colder plugs should not effect your performance and the timmimg retard might make your car feel a little sluggish but nothing serious so just get a mallory 685 and you can just adjust it by push button control.
