When is a head flowing too much?

in building a stroker setup I've been looking at the AFR 210's and 220's...when is a head too big?

I think when the fluid velocity starts to decrease because your engine can't suck in enough air, or you aren't running enough boost (pick your poison NA or FI).

Just speculation..
