what offset do i want on y2k c5 wheels

what offset do i want on y2k c5 wheels
i want them to look nice and not fit weird, is a 56mm offset good? and also i would like to know if an 8.5 inch rim will fit a 275/40/17 tire just fine...if i were to go with 17s in the font and 18s in the back instead would that change anything? thanks
