What does rod damage do to the engine?
I realize it could do TONS of different damage and it could be just about anything, but what are common after effects?
I'm about to pull the engine out of a 93 and was wondering if there's any hope to salvage the block?
The car makes a pretty loud clack-clack noise at anything over 800 rpm. At lower RPMS (when in drive) it may not make any noise at all or just one clack every once in a while.
From what I've been told it has a cracked #7 rod. What should I expect? Any possible damage to the heads?

Usually, only catastrophic damage occurs when things let go and parts go flying. Your block and heads may be fine. Depending what is really wrong, you may have crank, rod and bearing damage. Hard to say until it is torn apart.

Coolant leaked into my oil and messed up lots of stuff in teh bottom.
3 Rod bearings, 1 of em spun. welded 2 mains bearings to the block.
number 8 rod bearing was so bad it actually let the piston hit the head
and yes the crank was hella ****ed up.

Only thing to really look for unless it threw the rod is if the crank bearings have spun. In this case the crank bores need to be line bored. Otherwise, it should be fine on a ol stock lt-1.
Either way, if the bearing is gone on the rod, have the block hot tanked/ dipped/ etc. Otherwise, all the metal shavings will run right back through the passages when oil gets pumped back through it
