stock heads, stock valves, what valve seals?
There are several sizes, I believe the stock valves are 11/32"

It doesn't say the quantity. at gmpartsdirect it says 4 valve seals in a package. I guess I should pick up 4 packs?

Yes, those are the ones you need. Also, I would go to your local Chevy parts department or SD performance. GM Parts Direct has a low list price for each part, then they kill you on the shipping.
