Is there an optimum temp for the LT1 to run at? Ive heard that running too cold can be bad b/c the oil doesnt get hot enought and ofcourse running extremely hot isnt good either.

Mine stays steady at 195. This is with stock thermostat and CSI water pump....

What temp does your car run at?

I see around 170-180 in mine on average. Around 190-195 with the A/C on in the summertime.

when I leave the line my temp is usually 175-180. Seems to give me pretty consistant results so far. There is a huge debate about the "optimum" temp for our cars. Search and see what u come up with. Every car is diff., and every person has their own views. In my opionon, try a few diff. temps, if possible, and see what u like.
