temp gauge going crazy! PLEASE HELP

temp gauge going crazy! PLEASE HELP

I was driving my car down the freeway today and all of a sudden the temp gauge went from 190* to 260* in about 5-6 seconds, so I stopped on the side of the road and the gauge went right back down to normal. As soon as I started moving again it started climbing.It did this 3 or 4 times so I let it cool off and drove it to my girlfriend's grandparents and the entire drive there (4 miles) it read 170*.

I have no idea what is going on... I just installed a new 160* thermostat and coolant sensor (the one in the block) a week ago, as well as had the fans re-programed. Also it has an e-water pump and manual fan switch.

Can anyone PLEASE help me out here, I need my car

Try bleeding the air out of the system.

I will try that, what is the proper proceedure for bleeding the system? Also, is it normal for air in the system to cause it to work for a week just fine before it overheats?
