A stock 350ci LT1, turning 5,800rpm, assuming a 90% volumetric efficiency would be pulling about 525 CFM, or about 290 grams/sec with standard barometer of 29.92"Hg and an air temperature of 60degF, assuming no more than 1"Hg loss in the intake track.
I think the assumption of 90% VE is a little optimistic for a stock engine, but that gets you in the ball park.
What "larger aftermarket intakes" are you talking about? Do you mean the intake manifold, or the intake ducting/filter?

I've seen a couple of aftermarket 58mm throttle bodies for the LT1. Was thinking that if I did invest in a Granatelli MAF, I should increase the TB since the stock bore could cause a choke point, diminishing the effectiveness of the MAF. I would also bore the intake manifold using the techniques discussed on other posts.

The stock throttle body which is 48mm is big enough to support most moderate street applications. As for that Granatelli piece, make a search, it's other people experience that says it's more bad than good.
