I am helping Z28Roxy get her car back together after she removed the intake manifold to take care of the infamous LT1 intake oil leak. Everything should be good to go but the starter engages as soon as the battery is hooked up. The wires on the starter all look good. What should we check?

sounds like the solenoid is stuck in the closed position....with the battery unhooked(ie no power to solenoid) check to see if the resistance of the solenoid contact is showing open or closed(should be open with no power)

Check to see if the little wire is touching the bat cable at the solenoid. If it isn't it's the solenoid.
