1. that just take off the covers and and the cylinder covers... pull of the old head gasket and put the new one on...
others have said
2. go by the chilton manual...

is it really just bolt off and on or do i need to do all the crap the manual says

You need to follow the directions and have the heads surfaced.

By covers I am assuming you mean valve covers. You are leaving out the intake manifold, Exhaust manifolds and crossover tube. That is off the top of my head. You also need to have the heads checked if you are replacing a blown gasket and you are supposed to replace head bolts. I highly recommend a Chiltons manual especially if you have never done this before.
