proper breaking in motor

You should be occasionally beating the heck out of it by now. Soft break-in is not good for modern engines.

This is what we did.

Start it like normal, check for all leaks listen for sounds etc, by now chances are you have done rev'ed it lightly a few times.

Mail order tune (by the time you get this right it has done ran for an hour or more)

Then I pulled out and mashed it. I am with everyone else, one notch before you stole it. Chances are if something breaks in the first two miles it was the builders fault. Remember the only thing you are breaking in is the rings. (unless you have non roller).
