possible to raise the compression to 11:1 using stock pistons?
Can you run a thicker head gasket to get a 11:1 compression ratio on a stock bottom end? If so, what size do I need to run? Thanks?

Not thicker, thinner head gasket. I got an even 11:1 compression by using the .029 Impala head gasket (.049 stock).

Mr Gasket #5716. .026" compressed, and is cheaper and seals much better on aluminum heads than the Impala gasket

Cool, thanks. Im going for more cam, so I imagine more compression helps a cam more, you want less for forced induction.
