Get a cold air intake, Pacesetter LT's and just about any popular cat back on the market. You can do a search to see what everyone has to say about catbacks rather than starting a new thread. Avoid Flowmaster. Pacesetters LT's are arguably the best bang for the buck, I have them myself and I love them. Might want to consider an off road y pipe from pacesetter as well if your looking to get the best result.

What year is your car? What style long tubes do you plan on going with, "race" or "emissions"?

If sound is an issue, your not gonna want long tubes with the loudmouth for sure. But if your going to get longtubes (best option as far as performance), the Pacesetters are fine. The y pipe is not 100% necessary, however if you want the best performance, get the y pipe as well. As far as anything after the y pipe, it's up to you. You can keep the stock system, but again, for best results, look into a good cat back system, Magnaflow, Borla, Dynomax, theres many different brands that all good. Avoid flowmasters though.

while discussing this, is there any performace difference between the emissions legal ones and the non-emissions?

You will need the Pacesetter y-pipe. That is the only y-pipe that will fit those headers unless you get one custom made, which will most likely cost substantially more.
