I want to hook up a couple Autometer gages and wondering where's the easiest place to tap into the block for the sensors?

What year is your car?

Spare pressure tap for oil pressure right above the oil filter (unless your car is a 93/early-94 and has the stock oil pressure sensor there). Shoebox has a photo.

Passenger side head has a plugged hole between #6/#8 (same hole that is between #1/#3 on the driver's side and has the coolant temp sensor).
