I would test if first, both the sensor and the harness:

You can also do a data log to see what temp the sensor is reporting to the PCM.

The sensor screws into the water pump housing, gets removed with a wrench. DO NO ALLOW COOLANT TO DRIP ON THE OPTISPARK DISTRIBUTOR. You can drain the radiator below the sensor level. Or you can have the new sensor ready to quickly screw in as you pull the old one out - not easy in tight quarters, but doable.
