UPDATE:
Turns out the gasket wasnt the entire problem. The car was still giving me fits at idle. So, I made sure the Throttle blades were completly closed, i readjusted the TPS so the voltage was at .55 when closed, and i drilled out the IAC hole a little bit bigger. I forget the size, but it was 1/32" bigger diameter. (2 sizes up if your drill bits go in 1/64" sizes)
So far after about 40 miles of city driving with the a/c on I have not had an idle issue!

After i got my car all back together its doing this worse than ever, actually stalled a couple times today. Its throwing a SES code so ill have to check that out.
How did you check the voltage on your IAC? and did you drill out the little hole that is between the two TB blades at the bottom?

Yeah, i drilled out that little hole between the TB blades. I used a scanner to look at the volts of the IAC, but im sure you can do it using a multi meter.
Check shoeboxs website, I think he has instructions on how to set your TPS.
