Losing oil pressure under a load
Thank you for the part number. I have the baffle that is part of the pan, but no windage tray. If it can behave, I will put a tray in it this Summer. Now to figure out the goofy idle problem and ridiculous cam surge.
I have a 383 LS1 that does that from time to time. My rollers started nibbling on my cam and when I took it apart I noticed the oil pump pickup tube seal was in less than ideal condition. I also noticed this issue happens when I'm low on oil (I have HV oil pump) and the pan becomes starved. I think the cam/roller damage happened because of this. I'd also be tempted to say some of the bearing failures might have happened due to low oil pressure from a starved pump at high rpm
The moral of the story: Always make sure your oil level is correct before going WOT and pay attention when installing the pickup tube. I fill mine a quart high if I'm going WOT and haven't noticed problems to date unless again, i'm running low on oil.

does it still have the stock oil cooler? IF so Rip it out youll notice a HUGE difference in oil pressure its really not an oil cooler, its more just a stabilizer and to heat oil quickly for emissions. look up oil cooler removal...
