I'm not the most knowledgeable person on LT1's for a long time I thought the first V8 I'd ever own was an LS1, but I recently discovered a very affordable LT1 in my area and I want to buy it
1995 Z28 with 51,000 miles for only $6,500. It's in white, which is great becasue the 1993-97 headlights only looked good on white and black Maros IMO.
I was just wondering if you guys thought that was a good deal, and can any of you give realistic quarter mile and 0-60 times for a bone stock 51,000 mile LT1 at sea level.

That is a good buy if the car is in clean and nice shape.
At sea level in good weather it should run between 13.8 and 14.1 at 99-101 mph.
51k is extremely low mileage for that car, sounds like you've found a virgin.

What should it run with a K&N air filter and a magnaflow catback? Those will most likely be my first mods. I know gears would be great but I'm shooting for mods that will give a few ponies and some highway MPG's, I know a guy getting 31 highway on an LT1 with some breathing mods, and I'll be putting about 5k a year all highway miles.
What kind of mods am I looking at to get it to about 13.6/13.7 consistently?

Is it an auto or manual?? I am a little biased, but I think that '95 is one of the better LT1 years to get. You still have OBD I, and you have a vented optispark that is a little more resistant to breaking than the '93-94. With the single catalytic converter design like the 93-95 has, it gives you more flexibility when using emmissions legal headers, and because of the design the single cat style headers will outperform the dual cat style. Really all you should need to run consistent 13.6-13.7 is intake, exhaust, and headers or gears. That would probably put you at more like 13.5.......
