If they are moving around (O2 Mv) then they are probably reacting properly. Have you confirmed that the injectors are working properly (just shooting ideas)

Not really, the car seems to idle fine, as soon as it gets any gas it starts running real slow. No backfires or anything.
With the rattling under the car, the glowing manifolds and loss of performance when on the gas... it sounds almost for sure like the CAT.

Typically when exhaust glows it's from one of 2 sources. Either the timing is off or there is way too much fuel. The timing is extremely retarded and firing while the exhaust is opening which is not likely. The more likely answer is it is dumping fuel at a high rate and part of the fuel is burning in the manifold. A burned exhaust valve or one that is held open with carbon deposits could burn into the manifold but it would have to be more than a few and that is highly unlikely.
This raises the first question, what does your oil smell like, is it a fuel smell. So the next obvious question is do you have a dead cylinder? Check with a thermometer or pull a plug wire or injector clip. If you find one, and I suspect you will, stop running the car right away. Cylinder wash is bad.
What is the exhaust back pressure? If you can't measure the back pressure, pull the connection at the cat and see how it runs. If you were running rich, the cat is shot anyway.
Now a bunch of questions. You said the fuel pressure is ok but did you check the pressure after the engine is shut down to see how long it holds? Have you ever checked the vac line on the regulator to see if it is wet?
When did the problem first occur? What was happening prior to the problem and right when you noticed the problem? Had you done any work to the engine prior to the problem? What temp. is the ECM showing the engine is? What happens if you unplug the MAF and start it up?

It sounds to me like the cat is clogged and causing you back pressure. The rattleing could very well be a piece of the ceramic guts of the cat bouncing around in there and blocking the exhaust. I only say this because I had an opti go out which caused the car to backfire and I replaced the opti and a few weeks later I was having the same problems with the car not accelerating and no power. I took off the exhaust behind the cat and sure enough a fat piece of the ceramic mass was clogging the exhaust. Runs fine now

Well just had the cat replaced. it was 100% of the problem!! The car runs so much nicer than before now too! and waaay LOUDER!!
The old cat was the sound of the hollow mettallic rattling i had. A wafer between the inner and outer wafters actually collapsed and was causing some massive back pressure....
I want to also add that my old opti did not have ANY O-rings on it when i pulled it out, obviously a bad thing! It was the source of a tiny mystery oil leak i've had for ages... It feels so good tracking down little things like that and solving them by chance. All in all i feel good my car has a new opti, with it installed right and now runs like a bat outta hell again!

Glad you found the problem, Buy a high flow cat and replace it since you need one where you are. The high flow cat will operate properly and give you better flow.
