I see by some of the posts that the fact that it is just the engine has been missed in my original post. As an engine builder my first thought is to rip it apart and go nuts. Instead it's going to get a cam, some port work and a set of long tubes when the engine goes in the car. A set of 3.73's will probably be installed as well.
Now the one that comes out, that one will be torn down and be treated to some serious parts.

2. Yes, unmetered air will enter the engine, but it's such a small amount that it won't affect the tune. LT1's come programmed from the factory to run a little rich.
3. This eliminates any opportunity for oil to be sucked into the intake manifold which is a VERY common occurrence. (Especially ones that have been modded to run higher RPM's.)
On top of the unmetered air (which is essentially a vacuum leak for the computer, you are getting rid of the benefits of the PCV system itself.

If you are sucking a lot of oil into your intake, either fix your motor, or just put a filter where the breather goes ($4 at AutoZone).
