How important is the water temp. sensor in the water pump???

I just finished the blower install. I also have a hard start issue and then when it starts the RPMs jump up to around 2 then gradually come down to idle. I broke that water pump temp sensor during the install so it's running with the sensor unplugged and its throwing trouble code 16 I believe. How will this code affect the way the car runs? What does the PCM do with this reading? I'm doing to get a new sensor tomorrow at the dealership.

When I temporarily ghetto rigged the sensor back on the car started right up whereas it would take 4-5 seconds of cranking otherwise but i left it unplugged because the values were jumping up and down like crazy because it wasn't making a good connection and it was making the car act weird.

That's the sensor your PCM uses to control fan activation, among other things. It's important to have it in there.
