Ok, So my headers were supposed to be in today, but instead the shop got a call from hooker where they went to say that the hooker LT's for the LT1 Camaro are made on a by order basis......
I mean how many of you have them?
They said they only get maybe one order a month for them
Can I go to hooker and beat them with my stock manifolds

That sounds odd. I'm pretty sure that Jet Hot, gets Hookers and just coats them, unless the fabricate their own headers. If thats the case (the latter one) then maybe no one buys the Hookers anymore and they just don't make them cuz they weren't selling em. But, something still sounds fishy.
That definitely sounds fishy. I ordered my Hooker LTs from Thunder Racing, and got them in about 2 weeks (even with coating and O2 bungs). Keep in mind, that Hooker aren't stocked with ceramic coating, or O2 bungs. Those are done on a by-order basis.

Should I be more concerned? I mean besides this sucking as they wont be ready for my clubs dyno day this weekend.
Hopefully this is a reputable shop you are dealing with. I'd call them and call BS on them. Its possible they could just be on backorder and they don't want to look like idiots for forgetting to re-order when their supply got low. Definitely call them and get the story.
