front sway bar?
People typically do this for drag racing. It lightens up the front end and gives you better weight transfer. I personally would not do this on a car I drive everyday. The front sway bar has a huge impact on how your front end handles.
Removing the front sway bar frees up a few pounds of weight on the front. It also allows the car to sie up more easily which facilitates weight transfer to the rear wheels facilitating better traction.
My front sway bar has been removed for several years. Removing it did not adversly affect my handling under normal street driving conditions. However adding lightweight skinny rims and tires, drag shocks and springs, in conjunction with front sway bar removal certainly destroyed my ability to negotiate off ramps at high speed.

I would not recommend leaving it off for daily driving. Your car's suspension was designed with a sway bar as an integral piece. IMO, removing the bar would cause an imbalance in the cars handling predictability, especially in a situation like an accident avoidance maneuver. It is then you want your car to do exactly as you expect. I don't know why anyone would want to intentionally make their car less capable in this regard than when it came from the factory.
Take it off for the track if you want, but put it back on for daily use. MHO.
