I'm going to have a exhaust system installed on my 94Z eliminating the cats, also installing a cai, the car is all stock. Can anyone tell me if I'm going to run into any problems like service engine lights or anything else?

Most likely not.
obd1 cars don't have after the cat o2 sensors.
It might sound kinda raspy tho...

 

sorry 'bout the hijack, but I had the exact same question except my car's a '95. I still have OBD I, right? So, no problems removing cats?
