Engine Oil Temperature/Canton Pan

I've installed a canton race pan and I'm using the oil temp threaded recepticle that is on the passenger side of the pan(below the starter). Yesterday at the track (road course) my newly installed oil temp gauge reads 300 deg F. It seems stable around 180 idleing hot and climbs to 240 and then to 300 ...a little high I'm thinking ?? LOL.
I suspect the sensor is close to my headers or ?? This car has run 2 years of track days with no oil problems and the coolant temp is 180. Anyone had this problem ? I'll try the sensor in the low oil plug on the other side of the pan when I get a chance.
BTW what temps is anyone seeing in the rear axle ?
