Doing a Head gasket job. Need help w/ computing comp. ratio & gasket thickness LONG

I have a Lt1 383 stroker, i had built two years ago. ran mid 12's with it on street tires two years ago (all felpro gaskets). I had a lean computer tune and ended up blowing the head gaskets mid summer. I swapped them out for GM head gaskets, thought i'd give those a try, ran the rest of the summer on the same tune (cuz i can never get ahold of my tuner, he's real busy) soo, foolishly i ran it.... In october a woman smashed into my car. This brings us to last winter. I bought a new car a 1994, yanked the stroker out of my smashed one. pulled the whole thing apart, had a full port and polish job done professionally, cost a ton, manley race-flo valves, crane 10308 spring and shim kit and a GM 847 cam this time. have ARP head bolts as well. and put the setup together with felpro head gaskets.
I am still running the same computer as two years ago cuz my tuner has not been available ever. so yea, yesterday a Lt1 camaro SS pulls up to me. Naturally i have to smoke him, but then when I pulled up to the next light about a mile down I had big fluffy white clouds billowing out the rear.. so, i'm back to sqare one with the heads.
I realize that with a proper tune this should pretty much self correct itself, so i'd appreciate no grief about that.

Here is my setup and what i need help with.
Speed pro Flat top pistons with 4 valve reliefs.
5.7" rods
SCAT stroker crank
gm 847 cam
1.5 cc rollers
manley race flo valves 1.6 & 2.0
fully ported Lt1 heads (don't have flow #'s) but the guy who did them for me is very consistent and has produced many sets for other people that flowed at or near the 200 range.
the heads have been Milled .010", which i was told, with my setup, would make 12:1 compression ratio and OK to run 93 octane on. IS THIS CORRECT CALCULATION?
The combustion chambers have not been touched. and the head deck has not been messed with either. (unless the machine shop did it and didn't mention anything about it)

The car makes mad power but I just need to get a decent tune and some head gaskets that hold up. Short of "O" ringing the block are there any super duty head gaskets that i can get? cuz the fel-pro and the stockers just don't seem to do it. I only rev it to about 6k usually anything over that is accidental, and since my tune sucks i usually don't go over 4 or 5k unless some ricer is buggin' me.

any advice on what gaskets to get, what thickness may be good or bad for my setup would all be appreciated.

You need to get your chamber's cc'd and measure how deep in the hole your pistons are.
