correct operating termperature?

I recently had my 94 Z LT1 serviced in which they had to replace a heater core. At the same time they replaced the t stat. I used to run when the engine was fully heated about 180 degrees and now run 200. is this a normal operating temperature? I checked the bleeder and no air was found....thanks
