Does anyone else have the problem where your low coolant light comes on when you first start the car, but after about 2 minutes you can shut it off and turn it on again and you get no light?

Have you actually checked the coolant level in the radiator, like in the morning when it was stone cold? I would. Sounds like you might have an actual low condition.

The coolant level sensor is connected to a "latching" circuit in the RAP module. This keeps the dash light on for the current drive cycle, even if the coolant level rises (like it usually does when the engine warms up and the thermostat opens). The coolant level is probably higher when you shut off the car and then still high enough not to trigger the sensor when you restart it.
