Coling issue.. need some opinions.

Cooling issue. Here's what's happening. If i drive my car for an extended period of time. Say about a 20 minute drive for about 20-25 miles, the temp rises to about 220 and sometimes a little higher. Here's what i've done so far, Replaced the Rad cap, the one i had on it was only a 13PSI one and stock calls for 18. Put a catch can on my catch can.. yeah.. i know.. sounds funny but atleast it shows me that my coolant pressure is deffinatly rising cause i got back from my drive and the catch can's catch ... well.. bottle.. had coolant in it. The fan is running, which is where i'm kinda going on this. It's a single fan without any kind of shroud on it. kinda a quick fix type of thing just to have a fan on it. Oh yeah... forgot to mention that i do have a 160 thermo. I haven't really test drove it anywhere other than on the highway. so i don't know if airflow is the issue or what. The fan will cool it down when it's sitting still, and i can leave it run at idle for any amount of time and it seems to stay right about 160 on the temp gauge. so i'm looking for some opinions on whether or not it's an airflow issue or if i need to look somewhere else. Oh yeah.. dumped a bottle of RedLine water wetter in there today too. This is my new 383. Thanks for any advice.

Get the rad put in the vat and cleaned and replace the "T" STAT or put it in a pot of boiling water to see if it opens.
Do you have an electric water pump?

If the fan is running while you're driving at highway speeds, it could actually be an obstruction to airflow through the rad.

Have ya pressure tested the system?
Do you still have the deflector(air dam-spoiler) that hangs down under the nose in place?

Haven't pressure tested it.. and the air dam isn't quite complete.. which it one of the things i thought it might be. There's alot of room for air to escape around the Rad which is why i'm kinda leaning that way right now. It doesn't seem to heat up so much when i'm driving around on streets. I've gone to the gas station which is about 5 miles away and the car got up to 160 and didn't go any higher on that trip. My old set up also ran with 2 fans but someone decided to steal one of the fans so right now i'm running a single fan from a road master on the set up.

That air dam will make it run hot if it is not all there to deflect the air up and into the rad.
