Question clutch dust ... all the time.. no pilot bearing

the guy who had the car before me put in a puck style clutch and it was way too much for the mild engine..... It burnt up when I was on the road and i picked up a new one at a local speed shop in that town. When i was taking the tranny out I broke off the tip of the snout that goes in the pilot bearing. I put the car back together with the new clutch and broken snout, because I had no choice at the time and no where to get the tranny fixed. So in essence there is nothing in the pilot bearing. I also replaced the rear main and oil pan gaskets at the same time. The clutch smoked a lot at first, even after i gave it a long break in period (500mi). So i replaced the slave and master cylinder, which helped but it still smells when i drive... even when i don't get on it.....the car was still leaking oil so I put in a new intake manifold gasket a month later... it continues to have clutch stink....what could it be??? the oil.... or the bearing...... HAS ANYONE ELSE RAN A M6 FOR A LONG PERIOD OF TIME WITH NO PILOT BEARING... WHAT HAPPENS.....
