Changed Plug Wires, Temp Gauge Bounces! HELP!
I need all the ideas i can get on this one, from the simplest to the most complex! Anyways, here goes...
I changed spark plug wires on my car tonight because a pulley chewed 2 up and they started arcing, so now that this problem was remedied, i got into the car, started it up and loved the sound of a non missing engine, much to my despair i was going to take the car home and noticed that accelling down the road it seemed to sputter and not have nearly the power it had, EVEN WITH THE MISS! Im pretty sure my head gasket is not leaking as i did let the car warm up very well before taking it out, and i did not have smoke coming out from the hood or undercarraige and did not smell the infamous burning of coolant. The temp gauge would drop from about 210 down to 170 or so and bounced back and forth between about 50 degree's, I noticed this ONLY occured when i accelerated the car, whether it be a big toe push or throwing it into half throttle.
I havnt checked the car over yet because it was dark and i am tired after my job and then fixing the wires, but i DO KNOW before i drove it up the road that i had no oil or coolant leaks, i double checked for the hell of it while the car was on jackstands. Then driving in home in my toyota instead, in certain places where i MIGHT have put it to half throttle, it looks like there MAY BE coolant spatter on the road? (again it was dark and i couldnt see it well enough to know)
So....any ideas AT ALL on what it could be before i start getting into the car and searching out the problem?

*Almost forgot, to add another twist to it, my check engine light (which has been on for !cats) started FLASHING, then when i made my turn around, it stopped

Double-check to make sure the plug wires are on the right plugs.
Check the coolant lines going into the water pump as well, they may have been knocked loose when you were in there.
When the radiator is cool, check the coolant level as well and bleed out any air trapped in the system.

The sensor which feeds the dash gauge is located on the driver's side head, right next to the plug wires. My guess is you either knocked it loose, or a spark plug wire is messing it up somehow.
Sounds like a plug wire or two are either still arcing, or not fully seated on one end. The flashing Check Engine Soon light is an indication of a misfire.

Flashing SES is from a constant missfire/dead cylinder.
Check the plugs for the wires you changed. It's possible the porcelin could be cracked which would cause the car to run fine for a minute and then start missing. As stated the temp guage sensor for the dash is on the drivers front of the head between #1 and #3 primary. Check to make sure it's not being shorted out on a plug wire or burnt... etc.

Well, thanks for everyones help, turns out the help i had left the boot on the #8 cylinder loose, he never snapped it on the plug and i did find my #5 plug cracked, so i replaced it and all is well.
