I duno how all this exhaust stuff works, but is it possible to just "unscrew" the cat, throw in an intermediate pipe, fasten it on? I want to save the cat for my next emissions test but dont want to have to do a big fancy welding project with mr muffler man. i have a 95z not from california.. so it shouldnt throw a code. how doable is this? what kind of pipe/adapters/clamps would i need?

I think you could just buy a off road y pipe, but if you cut out the cats youll have to weld straight pipes in there place.

Your cat should be welded to the ypipe. So your best bet would be to buy an offroad pipe. Then cut the stock cat off of the y pipe. Since you don't want to do any welding. You might be able to slip the OR pipe over the Y pipe or vice versa and clamp it on. You'll have to hop under the car and do some measuring, before you order parts.
