Don't forget to use locking bolts - I discovered the hard way that if you use bolts that do not lock, they will back out from vibration and heat and you get a blown gasket. They also are very difficult to get a socket or wrench on. I just got stage 8 bolts and will be installing them shortly.

You'll get all sorts of answers, but in my experience, get the Felpro 1406's or Mr Gasket Ultraseals. They are both very similar in construction and work great. The factory metal gaskets are nice too. I had bad luck with copper gaskets.
You do not need locking bolts. You just need to make sure that you retighten the bolts every once in a while for the first few weeks. They will stay locked after a little while. The stage 8 bolts can be very hard to work with. The Breslin splitlocks seem a better design, but I don't think you need locking bolts at all.

GM stock gaskets. I've tried to be cute before with all sorts of different header gaskets. Believe me, I've tried a few in the last 5 years. So far, my best combo has been GM gaskets, and locking header bolts. No leak, and those suckers just don't burn.
