All thats needed for head gasket swamp.

I'm going to buy the gasket kit for head gasket swamp off sumit for $200, is the stock GM head gasket a fine replacment? I know I need new ARP head bolts, but anything else? I will be putting headers on at the same time.

You should be covered with that kit. If you're putting headers get a better header gasket like the felpro 1406 and get some better header bolts.

That kit from Summit is for the whole engine. The only gaskets that you need are...
Intake
Head
Exhaust
Coolant line or steam pipe gaskets/seals. These are used in the back of the heads where the coolant lines are attached. They are the size of a half dollar and round metal with rubber in the center and a hole in the center so the bolt slides thru. You will need 2 of them, one for each head.
The EGR pipe gasket, there are 2 needed. 1 goes on the intake and the other goes to the exhaust manifold or headers on the passenger side. Sometimes you can reuse them.
and maybe the valve covers. A lot of times you can reuse them if they are made of rubber. Make sure the kit comes with all of the above.

I also recommend GM assembly adhesive part number 12346141. You will need this for sealing the front and rear of the intake. Others user RTV sealant as well, but IMHO the GM adhesive is the way to go.

Has everything I need for a Head gasket swamp. LT1's are Gen II SBC right?

Although I think I can get it cheaper if I piece together my self.

I already bought a head gasket set, I'm looking for an intake gasket still, and some exhaust gaskets, and the EGR. Do I also need new APR header and exhaust bolts? What kind of exhaust gasket?

You should be able to snag those gaskets from a local auto parts store.
