Lots of folks have done this. Do a search for lots of details.
In a nutshell, you remove the compressor and as much of the system as you want, bolt the a/c delete pulley in its' place and reinstall the stock belt. The delete pulley is a pulley assembly on a plate....
The only real benefit is a small weight reduction...the power consumed by the system is minuscule. and the summer discomfort level is pretty high.
