what will happen if.....
After i get my Mac headers and have them jet-hot coated, i'm going to have true duals welded up. Now, custom welding an xpipe aint cheap. So I thought, once i find a shop that will do the true duals for me, I'll install the headers myself a day or two before. Then I will drive it to the shop.
It won't have any cats on it, just open headers, so the computer will throw error codes right? Is it possible to drive say 50 miles like that? Once the error codes are throw, and they install everything (including cats), will the error codes go away, or will i still have problems until the computer is reset or something?

Yeah, you're gonna get an SES light.
I put probably about 60-80 miles on my '96 with open headers. SES light came on after a little while but the car ran fine...except when cruising. I had to drive around at like 4k RPMs or the car would start to "stutter" (basically felt like a bad miss). I assume the lack of backpressure was the problem.
Anyway, the SES light will not go away. You'll have to reset the PCM but that's no biggie. Read: www.ls1.com/link_ecm.html
