Stock operating temps of LS1?
My car stays just under the 1/4 mark (180* ??) when driving around. It will only touch 210* if my car idles for like 20 minutes. So I take it the thermostat was changed by the previous owner and the fans have been programmed to come on sooner?
Only reason I bring this up is the fact that I would think my mileage would be a little better than it is. Not complaining, but I figure this might cause the car to run rich and effect my gas mileage some.

my 98 does the same thing. It ran at around 180 for the first 5 months that I had it. i actually kinda freaked out the first time it hit 210. From what I have read this is kinda normal. Keep in mind that 98's are the only LS1 year that got working temp guages. Every year after that got analog idiot lights.

99+ have a temp guage that ar eidiot guages, cold, warmed up, and overheat.
98 have guages that'll fluctuate according to the engine temp. My car's in the same boat. Temp will go to 210 in traffic, will drop quickly to around 180 when moving. Completely stock to cags, 44k, unmolested except for bfg kdw tires, silverstar headlights and a K&N filter. I have since added a SLP lid and changed the battery to an optima redtop from my 88 which was <1 year old. I still have cags. I'll do something about it over the winter while its in storage.

GM - I like watching it move and knowing what is really happeneing ! ) , so I have no clue.
