Did changing the exhaust move the O2 sensors a bunch or are they still in about the same place? How about the wiring to them?

Which O2 sensors do you have? I know some people have had this problem with the Bosch sensors, but I'm running Bosch O2s with Pacesetter LT and TSP True Duals with no problems. I believe the people with problems after switch to AC/Delco (Denso) the problem went away I think.

No Too high FP would cause your long term fuel trims to be off only.
