The coolent light on my 99' SL1 comes on after the first five minutes of driving.

If I turn off the car for a minute and start it again the light is off ,but after a few minutes of driving comes on again.

I have plenty of fluid in the the resivoir and the tempreture gauge is normal.

If it is a sensor where is it located about?

I have the same EXACT problem, i was told to check the sensor which is located on the backside of the radiator, i pulled it out and put it back in and now it just comes on as it please's , i think i might need to a. buy a new one
B. clean the stock one
c. flush the coolant b/c maybe there is a buildup of rust contributing to the dirtyness of the sensor.

 

mine did the same thing,get a new sensor part #10096163 from chevy and that will fix it.the sensor costs around $53.00 hope this helps

When I get "unlazy" I'll attempt to clean mine, but since it only does it when it is cold outside ( below ~55 ) and is not doing it now - eh, what's the rush ?

Anyway, the above is a great guide to removal/replacement.

This was also a common problem in lt1s, first i'd try bleeding out your system, make sure you run the heater too to get any possible trapped air out of the heater core. If that doesn't do it, I know on lt1s you can just disconnect the sensor and it won't through any codes, if you do just be sure to check your coolant level on a regular basis.
