car got hot yesterday

on the freeway coming home from work, I noticed the needle up to about 200, scared me cause i never seen the needle that high(It never goes beyond the first hash mark even on hot days with the a/c on in traffic), I have a 160 t-stat(autozone), hypertech(to change fans), I recently flushed the system and added new dex-cool Orange i think. I had the A/c on but I do everyday, i pushed her a little and cut the A/c, then the temp came down, Should I be concerned. I drove her to work today, my commute is about 30 miles each way

200 isn't even enough to boil regular water in a pot, besides the fact that you are using antifreeze and a pressurized system raises the boiling point of water greatly.

Besides... the temp gauges on LS1 F-bodies aren't very accurate, anyway

The '98 gauge actually works. If it just started happening after the flush and continues I'd check the easy stuff first, make sure all the air is out of the system, radiator cap is holding pressure. Is your low coolant sensor hooked up?

The 98 F-bodies gauges ARE pretty accurate. But 200 degrees is nothing to worry about, even if it normally runs a little cooler. The boiling point of a properly maintained cooling system (good coolant, no air pockets, and a cap that holds pressure) is over 250F, but if you see it climbing up over 220, then you have a problem!

Point is, don't worry about why the car would run above 220F if it's not running above 220F. You stated you were running the car hard, in the summertime, with the AC on, and it was around 200F. I'd be more concerned if the coolant DIDN'T get a little warmer than usual.
