That's an easy answer, LS1's have no torque.
On a serious note, it's been argued that having no backpressure in the exhaust increases your top end power, at the expense of low end torque.
Could also be that you don't hear the tires spinning as much because of the extra noise from the cut-out.
I'm assuming it's an automatic, and you're stomping it from a stop.

On my LT1 I dyno'd it with the cutout open and closed - gained about 3hp, lost about 3 tq with it open vs closed. I believe due to the same opinion as above, but not sure 3 tq coud make that much difference.
