How much of a hassle would this be? Any opinions are welcome.

Waste of time, if you really want an LS based motor buy a 98 or later f-body with high miles and work with that, otherwise you'll spend more on the conversion. Search buttons are our friends

A motor swap can be very worthwhile, or a nightmare, it depends on your ability, facilities, the research you put into it and how prepared you are. If you can hunt down the right parts it wouldnt be too bad, though your probably going to spend a good bit if you want an LS2.
