Red face Quench and Dynamic Compression Ration

Can some explain to me in newbie terms what this is? I keep seeing it, and I know it's important....I just need to see it termed for an idiot to understand it.

Quench is the distance from the top of the piston (at top dead center) to the deck of the cylinder head.
