Z28 track car 2

I've got a 94 Z28 set up for the track. It's got an issue with oil temp. It gets up to 240 pretty quick and then oil pressure starts to drop. It's got a pretty big oil cooler mounted in front of radiator. I'm running brad penn 20/50 oil. Looks like ground effects under front of car has been tinkered with but I don't know if anything is missing. Any help would be great.

Engine oil temp generally tracks coolant temp. What does the dash gauge indicate the coolant temp is? Does this problem occur at all times, only at low speed/idle, only at high speeds?

What is the oil pressure at low temps (specify RPM) and then at high temps (at what RPM?)?

What kind of oil cooler is it that sits in front of the radiator? Does the car still have the A/C condenser? Is it auto or manual trans? If auto, does it have an auxiliary trans cooler?
