Twin or single turbo?
Which is the better way?? My car will eventually become a full-on racecar, but untill I get totally wild with it (say in the 8's), it will be on the street.
Right now I have heads/cam (cc306) with the stock shortblock. Probably before I go FI, I will build a longblock to be able to support it. Most likely 383 with probably 195 or 210 AFR's.
Could I build the system and run low boost and make ~600 rwhp, then when I'm ready crank up the boost and make 800-1000?
Would it be good to go with one big turbo, or smaller twins?

You can build the engine to make 800-1000HP then limit it to 600 with a big waste gate opened up. That was exactly the plan I had for my car, 1000HP then when im on the street with pump gas open up the waste gate and make around 600.

I would hold off on the turbo/s until you can make the car a full on race car. It takes a lot of turbo and a really killer suspension to hit 8's. If you decide to go ahead with the turbo, I would probably go with a single small turbo over twins simply because of space concerns. You can always upgrade the turbo later. Just my twisted thoughts.

If it'll see some street time for awhile, the twins are easy to plumb into a dual exhaust. The headers are straight forward w/ T4 flanges on the end. I think it's pretty easy to plumb into a front mount intercooler w/ twin inlets and a single outlet.
Running the lead pipes into a single can be a pain to get around some accesories. Depends on how the headers are built.
The prices can be close. Twins require two wastegates. A large single needs the plumbing to it to be quality stainless steel for durability.
Go w/ the AFR 210's. Easier to make the power in the future. Yes, you can run an 76 or 88mm (large shaft) and turn down the wick. Either unit will want a Q or S trim (depending where you get it) to take full advatage of the either unit.
