Yet another torque converter question (about 1,3, or 5 disk setups)

Okay...well I am getting my transmission rebuilt within the next 2 weeks and I decided to get a new TC as well. I am going with either Yank or Vigi. Most likely vigi b/c of the positive comments I always see (I want to get it done right the first time...plus can't go wrong with the free re-stall). Anyways, I was looking at Vigi TC's and noticed they have single, 3 disk, and 5 disk set ups...can somebody explain the differences and which one I need.

BTW, as of now my car is stock besides exhaust. I am planning on getting Kooks LT's, electronic cut out, high flow cat (or it is a possibility I may remove it), and Lingenfelter Cold Air Intake by the end of the summer. I was looking at either a 2800 or 3200 stall....is that too much??? The car is a street car (my daily driver) but I would also like to take it to the track.

Also, should I get the Trans go shift kit?? I was looking at the package deals on Thunder racing.
