With a bolt-ons car, anywhere in the 2800-3200 range will work well. Some people have even gone up to a 3600 stall with no complaints. And yes, you should run a tranny cooler with a higher stall converter.

Make sure you get a quality converter too. I hear the TCIs are not that great. The quality of converter can make or break how your car drives. I have a 3000 Vig sitting in my room, i cant wait to get it in!

We've had several customers that weren't happy with their TCI converters. They make good converters for 3 speeds, but somehow "missed the boat" on the 4 speeds. At this point, we only recommend Yank, Fuddle, or ProTorque.
We have customers running great with Vigilantes, but we've seen some failure issues and TERRIBLE customer service from them lately. The owner of the company has acted like a complete A@& during the last few conversations I, and a few of my customers, have had with him. One of their converters wouldn't even fit in the transmission because they made the hub oversized. What good is a converter if you can't even get it in the transmission? After getting 2 converters with oversized hubs, my customer finally sent it back and bought a Yank.

As for stall? I've got customers running very good numbers with 3500 stall converters in bolt-on cars.

I'd say go higher than 3000 for max performance.
My car is %100 bolt-on and I'm runing a 3600.

I'd go 3500 if it's never going to be sprayed with the stock head/cam setup.
